Good results in the DFV sales and cost analysis 2016

Frankfurt am Main, July 25, 2017. The business advice center of the German Butchers' Association has presented the results of the 2016 sales and cost analysis. As in the previous year, they show a renewed increase in the average operating result. In addition, the evaluations once again confirm the trend towards ever larger and more efficient companies in the butcher trade.

The German Butchers' Association has been producing sales and cost analyzes for its member companies since 2006. Last year, a ten-year comparison was made for the most important key figures from the results of the analyzes for the first time. This showed, among other things, that the highest average operating result since the base year 2015 was generated in 2006. The proportion of material costs was at its lowest in 2009, and personnel costs were also at their lowest level since 2006. It is now evident that the participating companies were able to increase the result from 2015 once again. The average operating result increased by 0,8 percentage points to 14,8 percent.

In this context, however, the DFV business consultants clearly emphasize that this is an average value and point out the large differences between the individual sales size classes. The smallest companies could certainly achieve results of 25 to 30 percent, while larger than average companies could achieve significantly less. Comparative values ​​are only meaningful within their own sales volume class.

In addition, the DFV business consultants suspect the main reason for this development to be the material cost share, which has fallen by the same amount. Another influencing factor seems to be the low pork price level in 2016. In addition, the average proportion of personnel costs stagnated. According to the DFV experts, the reason for this is the persistent, dramatic shortage of skilled workers in the butcher trade.

The current sales-cost analysis by the DFV also shows how the size of the company has changed over the past ten years. While in 2007 there were still 19 percent of companies in the sales size class of up to EUR 500.000, in 2016 it was only seven percent. In the largest sales volume class, over 1,5 million euros in annual sales, 2007 percent of the members took part in 21 and 2016 percent in 43.
