Favorite snacks at the butchers: Leberkäse, meatball and sausage

In the new Snack Barometer 2022, trends and all sorts of interesting things to do with snacks at bakers and butchers are presented in figures. For example, it is about why consumers do not buy a snack from the baker or butcher. (Multiple answers were possible) For example, 30% of the consumers surveyed stated that “poor accessibility or lack of proximity” were reasons why they did not buy their snacks there.

The argument “the selection and the type of snacks does not meet one's own expectations” fell in second place with 2%, closely followed by the argument “the snacks are simply too expensive”. A lack of atmosphere, uncomfortable furnishings, long waiting times and a lack of seating were also mentioned relatively often. When asked what requirements consumers have when buying snacks, the most common requirement is “just eat”, closely followed by the requirement “fill up”. After the requirements “freshly prepared” and “inexpensive”, however, the requirement “to offer a new taste experience” was in fifth place on the ranking list. At the end of the list of requirements we find the requirements “vegetarian, lactose-free, gluten-free or vegan”. The reason for buying snacks from bakers and butchers was also asked. There are overlaps here, but there are also differences.

While breakfast snacks are still 37% more popular with bakers than 10% with butchers, consumers tend to go to the butcher for lunch or as a snack between meals. In principle, the corona pandemic does not leave bakers and butchers unaffected when it comes to buying snacks. 52% said they ate as much snacks as they used to, but 30% confirmed that they consumed fewer snacks than before the pandemic. In a further survey of consumers who work in the home office or who are schoolchildren and students, they asked about their preferences in connection with snack consumption.

On a scale of 1-5 (5 = highest agreement), the respondents indicated with 3,1 that snacks "have become small breaks from everyday work" for them, and also with an agreement of 2,8 that they are "over the." Take several small snacks instead of one large meal during the day. When asked about the consumption of beverages at butchers and bakers, 50% of consumers stated that they do not buy beverages in butchers. In bakeries, on the other hand, more beverages are bought, especially hot beverages. However, the question of why that is so was not answered. Ultimately, the questions about consumer favorites with the two providers. Butchers still sell meat loaf, then meatballs, followed by hot sausages and schnitzels. Only then do the cold dishes follow, such as sandwiches or salads. The bakers have sweet pastries in front of sandwiches. In contrast to the butchers, the cold dishes are the top priority for the bakers. It is noticeable that people are still eating very traditionally.
