Onion sausage fresh and safe

This is how the perfect onion sausage has to be: with a hearty taste and strong color, fresh and easy to spread. However, the spreadability is often a major challenge, as national requirements require a pH value of below 5,60. Acidification is therefore absolutely necessary. If the acid is too strong, the onion sausage becomes hard to cut. On the other hand, if too little acidification is used, it does not meet the national requirement. With the new PRIMAL® onion mince perfect oGAF, Van Hees (Walluf) has the perfect solution ready.

PRIMAL® onion mince perfect oGAF is a complete mixture for the production of fresh onion mince sausage. Finely coordinated spices such as pepper, nutmeg, onion and ginger guarantee the typically spicy and at the same time fresh onion sausage taste. The integrated intensive reddening ensures rapid nitrite breakdown and a bright red color. The precisely coordinated freshness offers a high level of protection against Listeria growth. The controlled acidification ensures a pH value below 5,60.

The preparation is very simple: cut fresh meat into cubes and freeze lightly.

Then mix the frozen meat with PRIMAL® onion mince perfect oGAF, PRIMAL® SK soft 50 and nitrite curing salt and then mince 3 mm. Slightly mix the ground mass to the binding and fill into the desired casings. Then let the onion sausage turn red in the cold store <7 ° C overnight. The product is ready for sale the very next day.
