Germany's school caterers rate the economic environment with a smooth 4,0 (previous year 3,7), the political framework received a 4,3 (previous year 4,1) on the school grade scale. Compared to the previous year, the certificate is again worse. With the VAT regulations still in force, high standards and low food prices, no light can be seen at the end of the tunnel, according to the respondents. The economic pressure is steadily increasing. The discussion that was sparked about the quality of food after the wave of vomiting and diarrhea in East German schools would unfortunately not have changed that. "The price still beats every quality argument," says Silke Schnapp, head of Aubergine & Zucchini, a Bonn school caterer. Even for the market leader Sodexo, there is little scope for quality improvements: Obeying the economic hardship, there will be no significant nationwide changes, says company spokesman Stephan Dürholt. The displeasure of the school caretakers surveyed primarily affects political decision-makers. "Politicians don't want a good school lunch, just a cheap one," one food provider sums up. The sales price for a school lunch is on average 3,19 euros gross - an increase of only 8 cents compared to the previous year.

The positive message: The vast majority of those surveyed (88 percent) now base their offerings on the quality standards of the German Society for Nutrition. And every second school caterer offers three menus to choose from every day. Pasta with tomato sauce tops the hit list of the most popular children's dishes. However, anyone who thinks that only hamburgers and fries work is wrong. Favorite dishes also include chicken fricassee, baked potatoes with sour cream and fried vegetables, as well as lentils with spaetzle and sausages.

The catering company Sodexo, based in Rüsselsheim, remains the undisputed market leader when it comes to catering for schools and day-care centers. Sales in 2012 totaled 84,5 million euros.

The complete results of the survey were presented at the 3rd Internorga School Catering Forum on March 12 in Hamburg. Under the motto "Healthy, delicious and popular!" top-class speakers presented concepts and ideas for the modern school canteen. In the year of the general election, everything revolves around healthy and affordable school meals. Speakers include the nationwide expert for school catering, Prof. Ulrike Arens-Azevedo, the longstanding school doctor and founder of the outpatient therapy program Moby Dick in Hamburg, Dr. Christiane Petersen and Stephan Dürholt from the market leader Sodexo.
