Appetite for meat alternatives: New concept for vegan minced meat

Loryma has developed an innovative concept for vegan wheat-based minced meat that convincingly reproduces the sensory properties of the original. It has a protein content comparable to that of the meat variant, less fat and saturated fatty acids and additional fiber. The focus is on the combination of textured wheat proteins with starch-based binding components, which give the raw minced meat imitation the necessary binding and the cooked product the convincing meat-like structure. On the basis of the odorless and tasteless ingredients, the desired taste can be individually adapted without off-flavors. Manufacturers can use it to expand their range and offer consumers a flexible, plant-based alternative for preparing a wide variety of dishes.

The concept enables the production of both chilled and frozen frozen minced meat for uncomplicated and versatile preparation by the consumer. The starchy binding component ensures the characteristic rolled look ("angel hair"), so that stable balls, meatballs and patties can be formed. The product can be easily separated when frying in the pan. The vegan minced meat is also suitable for the preparation of cold finger food, as an irreversible, stable bond is formed after cooking.

The textured wheat proteins Lory® Tex and the functional wheat-based binding system Lory® Bind are both odorless and tasteless and therefore allow individual seasoning and coloring without undesirable aftertaste. The structuring texturate gives the vegan mince its fibrous texture and a firm, typical bite.

The current nutrition report of the German Federal Ministry of Food and Agriculture shows: The demand for meat alternatives is growing. Around half of 14-29 year olds and 38% of 30-44 year olds buy these regularly. At the same time, more respondents said they like to cook themselves - the proportion rose from 72% in 2020 to 86% this year.
