Natural colors and flavors

Frankfurt / Amsterdam, September 7, 2017: The great consumer demand for foods with natural ingredients has had a lasting impact on the food industry. In order to meet the new requirements, manufacturers of flavors and colors have invested heavily in developing natural alternatives. Fi Europe & Ni 2017 offers an excellent overview of a sector that has grown in recent years like no other in the food and ingredients industry.

Solutions for a complex market
Already in the 80 years, first criticism of synthetic colors in food was loud. Today natural alternatives are dominant: according to Future Market Insights, almost 60 percent of the entire market of food colors consists of natural solutions. The desire for food without additives also influenced the market of flavors.

"Consumers are skeptical of artificial additives with E numbers. They avoid products with long, hard-to-understand ingredient lists and instead demand more natural foods, "said Guido de Jager, Head of Group Marketing at GNT.

Although natural colors and flavors are now part of the standard portfolio, it remains a challenge to achieve good results with only natural ingredients. Producing a clean-label product requires standardized raw materials of high and consistent quality - not always easy if the mother nature of the manufacturer. In addition, the stability must be given even with longer storage life or higher ambient temperatures.

Paul Janthial, Director Food & Beverage at Naturex: "Every natural pigment has its own characteristic properties in terms of heat, pH sensitivity, light stability and solubility. In order to find the right solution in an efficient way, one must not just rely on the desired one Concentrate on the hue or its intensity, but has to keep an eye on all the details relating to the matrix of the application and the processing process from the start. "
