Optimal freshness

FRISCH TOTAL AL ​​inhibits the reproduction of critical microorganisms and can thus improve the safety and shelf life of numerous foods. Kulmbach, July 2020: Ingredient specialist RAPS is expanding its portfolio of functional products for craft butchers with a freshness-retaining agent based on acetate-lactate. The targeted combination of the two salts has a synergistic effect and is particularly effective in inhibiting the growth of listeria, for example. The sprinkling freshness-retaining agent is simply added to the sausage meat or brine during production, does not contain any allergens that require labeling and is convincing due to its mild sensory properties.

Around 12 tons of food are disposed of in Germany every year, more than half of which comes from private households (Thünen-Institut, 2019). Sausage and meat products are also often thrown away due to their expiry date. This waste of resources can be contained, for example, by using food that can be consumed for longer: the longer the shelf life, the higher the probability that the food will be consumed during this time. The production process must meet the highest standards so that a long freshness can be guaranteed.

In order to prevent contamination and to keep the germ load low, butchers can ensure optimal freshness by choosing the right ingredients in addition to meticulous hygiene and precise temperature control. The new RAPS product FRISCH TOTAL AL ​​acts on the metabolic processes of spoilage germs and pathogenic microorganisms by using the influence of acetate and lactate on the intracellular pH value. It has been scientifically proven that this can inhibit or even prevent the uncontrolled reproduction of bacteria. A few grams increase the safety of numerous products and improve their shelf life.

RAPS supports the quality assurance of artisanal meat and sausage products with an extensive range of sprinkleable and liquid freshness holders, some of which also stabilize the color retention. Whether meat products such as boiled sausage or cooked cured products, delicatessen salads and sauces or processed fish products - the freshness boosters are always developed to match the respective application. Because every product and every manufacturing process has its own challenges and requires individual solutions.
