Sales in the butcher's trade increased again

Frankfurt am Main, August 6, 2018. Butchery businesses continue to grow. The long-lasting trend towards more profitable and more efficient business units continued this year.

In the first quarter of this year, artisan butchers in Germany achieved sales growth of 5,3 percent compared to the same period last year. Even taking into account the price increase rate for meat and meat products of 2,6 percent, there was a strong real increase in sales of 2,7 percent per company on average.

From 2016 to 2017, the industry turnover had increased by 4,7 percent for the year as a whole. If the price increase rate is taken into account, German butcher shops achieved an average real increase in sales of 2,6 percent last year.

The growth in individual farms can also be clearly seen in the average values for employment and turnover. The average number of employees per company increased further in 2017 compared to the previous year from 11,1 people to 11,4 people. On average, that was a good two people more than a decade ago.

Since the number of companies fell in 2017, while the turnover in the butcher trade increased, the average turnover per company even increased by 8,4 percent to almost 1,38 million euros. Average sales per employee increased by around EUR 6.300 to just under EUR 121.000.
