Twelve excellent organic butchers for excellence

Mainz, 18. May 2017.The best Bioland sausage was selected this spring at the Bioland quality test. Twelve Bioland butchers from all over Germany sent their products for evaluation. At least three products with more than 92 of 100 points had to be evaluated by each company. All twelve Bioland companies passed the test and received a company certificate. The jury of three experts from Kulmbacher Fleischermeisterschule reviewed 53 products, 45 passed immediately, 37 with the full score. Two plants had to go into the checkup after receiving improvement recommendations for their products. The test criteria were appearance, color, consistency, smell, individuality and taste.

Bioland meat processors are regularly checked for compliance with the Bioland guidelines, from the raw material inventories through the manufacturing process to the product identification. The processing of Bioland sausage products requires high craftsmanship and well-founded knowledge about meat processing. "The production of Bioland sausage products is a high art! Only those who understand their craft can produce sausage products without additives and excipients such as phosphates and nitrite curing salt in such a top quality, "explains Hermann Jakob, inspector and head of the Fachschule für Fleischer in Kulmbach.

At Bioland, only selected ingredients and additives are added to the sausage. In order to preserve the quality of the Bioland raw materials in processing, only those processes are allowed which optimally preserve the ingredients of the foodstuffs. In addition, only 24 of the total 316 food additives currently authorized in the EU is permitted for the production of Bioland products. For the sausage production according to Bioland guidelines, only seven additives and auxiliaries are permitted. Bioland sausages contain no nitrite curing salt, no flavor enhancers, no antioxidants or phosphates. Instead, Bioland-Metzger work with tried and tested craftsmanship and traditional recipes. This requires skilled craftsmanship, specialist knowledge and passion.
