Structures and cost of goods in company catering

Company catering in Germany is in a state of upheaval. In view of cost discussions, performance is increasingly being put to the test. However, there is hardly any well-founded basic data on the current situation of canteens in Germany. The CMA Centrale Marketing-Gesellschaft der Deutschen Agrarwirtschaft mbH, together with the ZMP Central Market and Price Report Office GmbH, had an extensive primary survey carried out.

The present results of the study "Structures and cost of goods in company catering" provide for the first time a representative picture of the market for company catering. This data is an important tool for anyone who deals professionally with community catering. In addition to the structures of this important segment, the study also provides information about product groups and their use, eco-products, sources of purchase, guest campaigns. It also compares company catering and social catering. It thus draws a comprehensive picture of the structure of company catering:

    • Around 14.000 of the approximately 39.000 companies with 100 or more employees offer staff catering. Two thirds of them cook on site themselves.
    • 26 percent of the company restaurants are managed by professional caterers.
    • Only 60 percent of canteens are still supported by employers with subsidies. trend decreasing.
    • The purchasing volume or the cost of goods in food and drinks in company catering amounts to approx. 1,8 billion euros a year.
    • Meat accounts for the highest spending on the shopping cart of canteen kitchens at 29 percent, with pork at the top of the list. Frozen products are of great importance in almost all product groups.

The complete study was published by CMA and ZMP in cooperation with the journal GV-Praxis. The editors of the trade journal commented on the information collected in the study in a practical manner and presented it in clear graphics.
