Europe-wide protection for regional specialties

The Wolf Group is the only manufacturer in Germany to offer both "Nuremberg Rostbratwurst" (under EU protection since 07/2003) as well as "Thuringian Rostbratwurst", "Thuringian liver sausage" and "Thuringian Red Sausage" (since 12/2003 under EU protection) Releases.

Finally, the Thuringian Rostbratwurst is actually from Thuringia and precisely written down in its recipe and production. Because the "counterfeit" originals have now been put a stop from the highest authority: The EU Commission has with the entry of description and geographical area in accordance with Article 6 Paragraph 2 of the Regulation (EEC) for the protection of geographical indications and designations of origin for agricultural products and food the Thuringian grilled sausage, the Thuringian liver sausage and the Thuringian red sausage placed under protection of origin. In addition to the Nuremberg sausages, the Thuringian roast sausages are now protected as a regional specialty throughout Europe. According to the current regulations, these Thuringian specialties can only be produced by those who actually have their production at the Thuringian location according to protected recipes.

The original Thuringian bratwurst from Wolf

Fine roast pork, plus salt, pepper and cumin or, depending on the region, marjoram and garlic - the almost modest-looking recipe for a bratwurst is ready her famous colleague from Nuremberg. Martin Luther and Goethe loved it, the Thuringian Rostbratwurst, and it was not only honored in literary terms in Grimmelshausen and Simplizissimus. It was first mentioned in a document in 600, the same year that the Little Ice Age began (which lasted until 1404) and the Bremen statue of Roland was erected.

Despite, or perhaps because of, its simplicity, the Original Thuringian Rostbratwurst from Wolf is demanding. Because they are not only available brewed in different packaging forms, but also - very traditionally - raw. And like a raw egg, it must therefore also be manufactured, cooled and transported. A logistical masterpiece, which the Wolf company has mastered extremely well. Incidentally, Thuringian Rostbratwurst is only allowed to be sold by those who actually produce it at the Thuringian location, as is the case with the Wolf company with its Schmölln plant. In mid-December 2003, the EU Commission classified the designation Thuringian Rostbratwurst as a protected geographical indication.

Purists toss raw bratwurst in water and then place it on the charcoal grill (not gas!), which is best rubbed with bacon beforehand. The grill must not be flaming and the embers must not be too hot either, otherwise the thin skin will burst and the fat will run out, which means that the actually very juicy sausage tends to dry out a little bit. Not an easy matter, then, the roster, which is why there is a saying in Thuringia, "The Thuringian is only a man when he can roast sausages!"
